Vegetables may not be the most exciting food group, but it's definitely one of the most important. Here are my top three tips to easily incorporate more veggies into your daily meals and snacks.
What I personally love about vegetables is there are so many ways to prepare them. If you're not a big fan of raw OR cooked veggies, don't fret! There are tips in this blog post for you too. ;-)
1. Chop up veggies as soon as you buy them
If you're anything like me, it's very easy for you to buy a bunch of veggies at the store with nothing but good intentions to cook them up and eat them throughout the week...but then the week rolls along and you just don't have the energy for that.
My number one tip to combat this is to keep your motivation going as long as you can when you buy your veggies for the week, and chop them up right then and there. You can easily freeze and thaw them as you go to prepare your meals. You can also store them in a large veggie tray with multiple compartments and snack on them with your favorite dip throughout the week.
2. Use bags of frozen veggies for cooking
If you're not a fan of chopping, frozen veggies are a great option. Contrary to popular belief, frozen veggies are just as nutritious as fresh ones! Just make sure to look for bags that don't have any added sodium or sauces. I love using a bag of frozen mixed vegetables when I make stir fry, or a bag of frozen broccoli when I make loaded baked potatoes. Frozen veggies are quick, healthy, and require zero chopping!
3. Add veggies to fruit smoothies
This is one of my favorite and most-used tips for eating more vegetables. Adding veggies to a fruit smoothie is also a great way to eat vegetables without actually tasting them if you are truly not a veggie fan. My favorite way to do this is to add a cup of spinach to a classic strawberry banana smoothie. It may look green in color, but I promise you will not be able to tell there are any traces of vegetables in it!
