If you've been looking for the perfect healthy summer snack, your search is over. Give these a try next time you're craving a sweet frozen treat to beat the summer heat! (I don't know sometimes I rhyme.)
You can prepare these with a silicone mold to get the rectangluar shape, or you can simply prepare them on parchment paper if you don't have a mold and don't care about the shape. I promise they'll taste the same regardless!
Ingredients:
1 cup low-fat vanilla yogurt
1/2 cup diced strawberries
1 cup dark chocolate, melted
Mix yogurt and strawberries together in a bowl. If using a rectangular mold, add a thin layer of melted chocolate followed by a layer of the strawberry yogurt mixture to each section (depending on the size of your mold, you may not be able to fill each section). Top with another layer of chocolate. Place mold in freezer for at least 2 hours until the yogurt is completely frozen. Carefully remove the frozen bars from the mold and place in air-tight container. Store in freezer until ready to eat.
If you do not have a mold, add spoonfuls of the yogurt mixture to a baking sheet lined with parchment paper. Place in freezer for 2 hours. Add each frozen yogurt cluster to a bowl of melted chocolate and coat using a fork. Place clusters back on baking sheet and freeze for additional 15 minutes. Store in freezer in air-tight container.
